The casks are mixed casks and vats that previously held Pedro Ximénez and Oloroso sherry. Distillery master Billy Walker describes the expression as "a remarkable balance between the spirit of the distillery and the influence of the sherry casks used in the maturation process".
Nose: Peanut brittle, dates and a big scoop of chocolate ice cream.
Taste: Walnuts, raisins, Christmas spice and fresh ginger.
Finish: Coffee, Turkish Delight and a dash of flaky sea salt.
